Amarula Cheesecake

Ingedients

Crust
1 packet Nuttycrust biscuits  (crushed)
60 ml melted butter

Filling
500g cream cheese
2/3 c castor sugar
4 eggs
1/2 c Amarula

Topping
250 ml sour cream
1 T castor sugar
1 t Amarula

Method

Set oven to 180 degrees C
Mix biscuit crumbs with butter and push into the base and on the sides of a springform tin.
Place in the fridge until firm - 20 minutes.
Beat cream cheese to soften.
Add castor sugar and mix well.
Add eggs one at a time and mix well.
Add Amarula.
Pour into base and bake for 40 - 45 minutes.
Mix ingredients for topping. Spread over hot cheescake. Return the cake to the oven and bake a further 7 minutes.
Let it cool and place in fridge for at least 3 hours to set. Overnight is even better
