Mielie Bread

I found this recipe the other day. I have had it for many years, but I have never tested it. It takes quite a while to bake, but it is worth waiting for.

Ingredients

2 eggs
25 ml oil
25 ml sugar
190 ml self-raising flour
190 ml mealie meal
5 ml baking powder
420 g tin sweet corn
125 ml milk

Method

Sift self-raising flour, mealie meal and baking powder.
Beat eggs with oil and sugar. Add to dry ingredients.
Fold sweet corn and milk into the flour mixture.
Mix well, turn into a oiled ring cake tin.
Place into a tin of water and bake for two hours @ 180 degrees C.
Serve hot and buttered.
It goes well with braaivleis.
