Easy and very delicious.
Ingredients
1 c pecan nuts (crushed)
12 Salticrax biscuits (crushed)
1 c castor sugar
3 egg whites (whisked until soft peaks form)
1 t vanilla essence
1 t baking powder
Topping
250 ml cream
1/2 t vanilla essence
2 t castor sugar
Method
Mix all the pie ingredients together and pour into an oven proof dish.
Bake @ 180 degrees C for 35 minutes.
Allow to cool completely.
Beat the topping ingredients together until stiff.
Spread over the top of the pie.
