No Bake Christmas Cake

If you left baking the Christmas cake too late - like me, this is an easy recipe and you don't even have to bake it for hours on end. This is definitely not a traditional recipe. It has a fudgy taste to it.

How to do it:

Boil 1 c sugar and 1 c butter together for 5 minutes.
Add 500 g cakemix, 1 c glace cherries and 1/2 - 1 c chopped nuts of your choice. (I use pecans).
Beat 2 eggs, 1 t vanilla and 2 T brandy together and add to the cakemix while still hot. Mix well.
Allow the mixture to cool.
Add 2 packets of crushed Marie biscuits and mix well.
Press the mixture into a ring pan and press down well.
Keep in the fridge until completely cooled down.

Sago Pudding

I am no good at making a traditional sago pudding. So I decided to invent my own. I think that sago pudding is like milk tart - everybody have their own recipe that they make. This is the recipe I use.

Ingredients

6 T sago
4 c full cream milk
1 c sugar
3 eggs
1 t vanilla

Method

Bring the milk, butter and sago to the boil. Let it simmer until the sago becomes transluscent. Stir all the time.
Beat the eggs and sugar until light and fluffy, add the vanilla.
Add the egg mixture to the milk, whisking while adding the mixture. Stir the mixture until it thickens.
Remove from the heat and pour into a greased dish. Sprinkle with cinnamon.
The pudding can be served hot or cold with cream or ice cream.
