Homemade Bread

This bread is made with yeast. I got this recipe in a booklet a few years ago and have been using this recipe ever since. The booklet is falling apart already. There are quite a few yeast recipes in it and I will post more of these recipes in future.
This can either be made white or brown.

Ingredients

4 c cake flour
2 sachets instant yeast
1 T salt
3 T sugar
1 egg
75 ml sunflower oil
625 ml lukewarm water
4 c of additional flour (for brown bread use Nutty Wheat)

Method

Mix all the ingredients except additional flour together.
Add additional flour and knead the dough until smooth and elastic.
Place dough in a bowl sprinkled with flour.
Place bowl in a plastic shopping bag and close the bag.
Leave to prove for 1 1/2 hours until dough has doubled in size.
Knead again. Divide dough in two and place in two greased loaf tins.
Leave uncovered for approximately 45 minutes and allow to double in size.
Bake at 160 degrees C for 30 minutes.
There are few things as good as homemade bread.

Banana Bread

My husband loves bananas and banana bread is one of his favourites. This recipe comes from a very old recipe book and it is the only banana bread recipe I use. I just add a few pecan nuts sometimes for a different taste.

Ingredients

1/4 c butter
1 c sugar
2 eggs
4 - 6 mashed ripe bananas ( I usually use 4)
2 c cake flour
2 t baking powder
1 t vanilla essence
1/2 t salt

Method

Cream butter and sugar, add vanilla. Add eggs one by one, beating well after each addition.
Sift dry ingredients together and add to the creamed mixture.
Add mashed bananas and mix well.
Spoon the mixture into a loaf tin.
Bake at 180 degrees C for 55 min to one hour.

Spaghetti, Sweetcorn and Cheese

This is a nice light meal. The original recipe has three basic ingredients as the title indicates. We add bacon to it for a little more flavour.

Ingredients

2 c cooked spaghetti
1 tin creamstyle sweetcorn
1 c grated cheddar cheese
125 g bacon (cut into small pieces and fried)
125 ml fullcream milk
2 eggs
Salt and pepper to taste

Method

Mix spaghetti, sweetcorn, cheese and bacon together, turn into an ovenproof dish.
Beat the milk, eggs and seasoning together and pour over spaghetti.
Bake at 160 degrees C for approximately 45 minutes.
Serve with a salad of your choice.

Mock Cheesecake

This is probably the easiest 'cheesecake' you'll ever make. I think a lot of people have this recipe. I have modified it just a little bit and it tastes like cheesecake.

Ingredients

500 ml Greek double cream yogurt
1 tin condensed milk
Juice and rind of one lemon
Tennis biscuit base

Method

Make the biscuit base in a round pie plate. (20cm)
Mix the rest of the ingredients well.
Pour the filling into the biscuit base.
Bake in the microwave at 100 % power for approximately 2 1/2 minutes.
Watch it carefully, as soon as the mixture starts to bubble at the edge, take it out of the microwave.
Let it cool down and place in the fridge.

This can be made with any flavour yogurt you want. Just omit the lemon juice and rind.
